I’ve never made tomato soup from fresh tomato (actually i’ve made only canned tomato soup.. hehe) but when my husband came home with this crate of beautiful shiny red ripe tomatoes… woah… lets try. 

So basic three: carrot, celery and onions chopped up to go with the chopped tomatoes.

Heat pan and saute the celery, carrots and onion with olive oil and then add the tomatoes and water. Simmer for 1 hour.

Place in blender and blitz to puree. I added cream too and I served it with cheesy pressed toast. 

As this was an experiment.. hehehe I kinda threw everything in the pot with no recipe. While seating with my son slurping the soup… hmmm its a tad bit crunchy… OH NO… hahaha i forgot to de-seed the tomato! no wonder… my son was giving me a ‘its nice momma but something isn’t quite right’ look.. so i had to strain the soup to give it a seed free smooth texture. We love it as dip for the toast. delicious.

See? Nobody cooks perfectly… even the best ones keep making experiments and make mistakes. Only sure fire way to be a good cook is to keep trying. :)
